In honour of our first meal here exactly three years ago tonight (and not purely by chance *cough*), we had macaroni and cheese. Except this was the "best" quote unquote Toots "macaroni and cheese I've ever had!" And that's even substituting Italian pancetta for British bacon. Our first meal here though, that was simply this all American classic.
Anyway, Friday 18th February 2011 we arrived in Midland, with two little girls and two-thirds of a growing boy. We had three nieces, three single aunts and no plans to need the whole of our three-year visa. Oh how times have a-changed.
We now have two growing girls and two little boys, four nieces and four nephews, (almost) two married aunts and two new-to-the-family uncles, and a new two-year extension to our visa*. We've flown home three (or four for Joey and I) times in three years, and had eleven family (and soon to be family) members holiday with us over the course of twelve visits. Oh, and one non-family family holiday twice with us. We've visited seven States, toured different parts of Texas too many times to count and lived in two different houses in the city.
We've loved almost every minute of the last three years, except of course finding out that we had to move house while I was heavily pregnant, and that the International Food section at HEB had been taken away, and I'm sure a few other spots in between... But really, we've learned a lot about living, learning and loving as a family and about growing in our faith, and we are incredibly thankful for all those old-fashioned values that West Texans have shown us and taught us.
Roll on the rest of the time that we call Midland 'home'!
* Not that we expect to use it.
